Simple liver pate

February 3, 2012

Have leftover livers that you no longer find palatable? Not very good at cooking livers without them turning tough and undesirable? There is an easy solution! Liver pate.

This can be used with any kind of liver and any form of butter/ghee. Whatever comes out of that food processor or blender will turn out melt-in-your-mouth delicious. I literally ate this by the spoonful instead of as a dip because it was that good, despite not wanting to eat its former form as tough leftover livers.

1/2 lb cooked livers
1/2 small onion
1/3 cup butter or ghee
salt to taste (I used about 1/4 tsp)

(1) Chop onions and throw into food processor or blender.
(2) Slightly melt butter or ghee on the stove or by microwave. Add to the onions.
(3) Add livers with the butter/ghee and onions. Sprinkle with salt.
(4) Turn on the food processor/blender and allow to blend for over 3 minutes, until the mixture resembles a somewhat creamy paste.
(5) Store and serve with chips or crostini. Or enjoy by the spoonful.
