Easy tomato egg soup

Easiest lazy recipe ever for something warm, nutritious, and full of protein! This has been my staple dinner for the past few weeks, when it is dark at 5pm and I feel too lazy to be creative.

Thickening with some kind of starch is optional.

2 large tomatoes, about 1/2 lb
1/4 tsp salt
3 cups of water
2 Tbsp tapioca starch (optional)
2 eggs

(1) Slice the tomatoes and put into a pot with the water. Bring to a boil and simmer on medium-low for 10 minutes. Add salt and stir in.
(2) Take several Tbsp of water and mix it with the tapioca starch in a small bowl. Stir it into the tomato soup. Simmer for another minute or two.
(3) Beat the eggs in the bowl. Pour it in a steady stream into the soup while stirring the soup in a circular motion. Turn off heat. Garnish with green onions if desired.
