Simple tomato salad

I recently came back from my trip to the northern lands of Alaska, which was absolutely stunning in both views and overall experience. After gorging myself on the daily smoked salmon and readily made pork chop buffets, the last thing I wanted to do after getting home was to shop for food and to cook for myself.

Luckily, despite the fact that I did not water any of my plants for two weeks prior to the trip, when I came home, I was greeted by my bountiful tomato plant, which had a good 6-8 very ripe tomatoes, and another two times as many tomatoes on their way. So what was part of my first home-prepared meal? And a few more afterward…

Tomato Salad

One of the easiest salads ever, because there is only one main vegetable ingredient that requires chopping: tomatoes. Then, it’s mainly just adding the other ingredients to taste. Love it.

4 medium tomatoes, about 3/4 lb
1 Tbsp olive oil
1 Tbsp balsamic vinegar
black pepper to taste

(1) Chop tomatoes into quarters and combine with other ingredients in a bowl. Let sit for at least 10 minutes to incorporate.
